Blueberry Lemon Pancakes

Summer fruit pancakes? Yes please! Fresh blueberries get a citrusy boost with a little think! High Protein Lemon Delight bar in this delish combo (that's so simple too). You'll be whipping these up all season.

Macros for 3 pancakes: Calories: 180 Protein: 10g Net Carbs: 25g Fat: 4.5g

Ingredients

- 1 cup all purpose flour
- 2 tsp baking powder
- ¼ tsp salt
- 1 large egg
- ¾ cup unsweetened almond milk
- ½ cup full fat Greek yogurt
- 2 tsp lemon juice
- 2 tsp lemon zest
- 1 cup blueberries
- 2 @thinkproducts Lemon Delight Bars, roughly chopped

To serve (not included in nutrition):
- Maple syrup


Directions

1. Whisk together dry ingredients in a large bowl (except for Lemon Delight Bars).

2. Add wet ingredients into the bowl. Once blended, fold in blueberries and think! Lemon Delight Bars.

3. Heat a greased griddle (or pan). Use 1/4 cup measuring cup and scoop out batter for each pancake and pour onto griddle, fitting as many as possible without touching. Wait until the pancakes begin to bubble, about 3-4 minutes then flip and cook another 1-2 minutes. Repeat until all of the batter is used up.

4. Serve with more blueberries, a little extra lemon zest, and a drizzle of maple syrup!
