Lemon Poppy Seed Protein Bars

Want to whip up a yummy and easy protein snack? 7-ingredient lemon poppyseed bites are the key. (Made extra special with our High Protein Lemon Delight bars!)

Ingredients

– 1.5 cup Coconut Flour
– 1/4 cup Poppy Seeds or Chia Seeds*
– 2 tbsp Coconut Oil, melted
– 1 tbsp Maple Syrup
– 3/4 cup Unsweetened Almond Butter* or other nut butter
– 1/3 cup Unsweetened Almond Milk* or milk of choice
– 1 Think! Lemon Delight Protein Bar
 

Directions

Cut Think! Protein Bar into 8-10 pieces.
Whisk together flour and poppy or chia seeds.
Mix in oil, syrup, nut butter and milk until dough batter forms.
Scoop out 2 tbsp at a time.
Place 2 pieces of protein bar into the 2 tbsp of batter.
Roll into a ball.
Continue until all batter is used!

Store in fridge or freezer.
