Chocolate Peanut Butter Protein Cookies

Ingredients
– ¼ cup oat flour
– 1/8 teaspoon salt
– ¼ teaspoon baking soda
– 1/8 teaspoon xantham gum
– 1.5 tablespoons monk fruit or erythritol
– 1 teaspoon vanilla extract
– 2 tablespoons butter or coconut oil, melted
– 2-3 tablespoons milk alternative (oat, soy, almond)

Directions
Preheat the oven to 325F.
Mix all dry ingredients together in a bowl. Use a whisk to mix all together so there’s no chunks.
In a separate bowl add melted butter, vanilla and 2 tablespoons of milk and whisk to combine.
Cut up your two Think! Protein Bars into small chunks and add to your dry mix.
Fold the wet ingredients into the dry mix and combine until you have a formed ball of dough. Add a little more milk if its slightly to dry.
Line your baking sheet with parchment paper, make 1.5-2 tablespoon sized scoops of dough. Lightly flatten each cookie on the baking sheet before putting it in the oven.
Bake for 10-12 minutes.
Let cool for 10-15 minutes. Serve and enjoy!
