Chocolate-Dipped Apricots
Ingredients:
1/3 cup raw sugar
1 cup water
¼ pound dried apricots
2 ounces bittersweet chocolate chopped coarsely
1 tablespoon chopped almonds
Directions:
Prep baking sheet with wax paper Heat sugar and water in a small saucepan and bring to a boil. Stir until the sugar is dissolved. Add apricots and simmer until tender, about 7 minutes. Place apricots on rack and let cool completely Melt chocolate in small metal bowl over a pan of barely simmering water Dip half of a poached apricot in the chocolate and sprinkle some almonds over the chocolate, return to rack. Repeat with the rest and refrigerate until chocolate is set, about 20 minutes.
