Bella Bruschetta
- Sliced baguette (gluten free if you prefer)
- 1 cup chopped basil
- 3 tomatoes chopped
- 1 small onion chopped
- 2 Tbsp Olive oil
- Parmesan cheese for sprinkling (optional)
Instructions:
- Finely chop onions, tomatoes and basil (all separately)
- Mix together in a bowl along with the olive oil and leave to chill in the fridge
- Diagonally slice bread, drizzle oil on each slice, sprinkle salt and grill.
- Spoon tomato mix onto lightly grilled bread
- Sprinkle cheese (optional) prior to serving.
