Bella Bruschetta

  • Sliced baguette (gluten free if you prefer)
  • 1 cup chopped basil
  • 3 tomatoes chopped
  • 1 small onion chopped
  • 2 Tbsp Olive oil
  • Parmesan cheese for sprinkling (optional)

Instructions:

  1. Finely chop onions, tomatoes and basil (all separately)
  2. Mix together in a bowl along with the olive oil and leave to chill in the fridge
  3. Diagonally slice bread, drizzle oil on each slice, sprinkle salt and grill.
  4. Spoon tomato mix onto lightly grilled bread
  5. Sprinkle cheese (optional) prior to serving.
