Our Farmer's Market Favorites for Fall

This delicious dish of Roasted Sweet Potatoes and Mushrooms with Thyme and Parsley from Kalyn's Kitchen brings out the best in one of our Fall favorites.
We love all the changes that come in Fall — from colorful leaves falling to layering-friendly weather. One of our favorite changes is the new crop of fruits and veggies popping up at our local farmer’s market. Here are a few of our favorite healthy food finds, along with recipes and tips for choosing the ripest and best of the crop.
Persimmons. This delightful little orange fruit is packed with cold-busting Vitamin C, TK supporting Vitamin A and heart healthy fiber. There are two types of these tasty fruits you can try, including the most common Hachiya and the smaller, sweeter Fuyu. Look for persimmons with deep red undertones and a round, plump and smooth skin. We love this delicious salad of Fall Greens with Persimmons and Hazelnuts for a quick and easy workweek lunch.
Pomegranates. This beautiful red fruit has been shown to reduce heart disease risk factors, reduce systolic blood pressure and may even inhibit viral infections. We are fans of this delicious Honey Coconut Quinoa with Pomegranate recipe for a healthy breakfast.
Pumpkins. Not just for carving, these tasty veggies are loaded with vitamin A and fiber and low in calories. Try this yummy recipe for Pumpkin Soup with Toasted Walnuts for a cozy dinner you’ll make again and again.
Sweet Potatoes. These delectable root veggies are an excellent source of vitamin A, a very good source of vitamin C and manganese, and a good source of copper, dietary fiber, vitamin B6, potassium and iron. We love this recipe for Roasted Sweet Potatoes and mushrooms with Thyme and Parsley.
